Antarctic fish transform desserts

Ice structuring proteins have a long and very cold scientific history. The first ones were discovered in 1969 in the blood of Antarctic fish. An anti-freeze protein, based on those from North-West Atlantic fish, is now being added to ice creams and other frozen desserts.
